Recipes that Rock!

We have very few choices for restaurants so we cook elaborate meals at home on the weekends. I am always looking for meals that are fabulous since eating out at great places is not an option.

I second this :) I'm getting to where I would rather cook at home than eat out. It's so expensive and a bit stressful when you have to fight the crowd. I made a Valentine's meal for my husband and he loved it. I would love to have more "elaborate" recipes.

Easy recipes with items that might usually be in a "normal" home pantry
Crock pot

I am always in search of kid-friendly meals which will broaden my kid's palates without having to puree 18 vegetables the day before.

*healthy* stuff. It's so easy to find recipes that will make me fat and happy, but I'd like to be healthy and happy.

and if that healthy stuff goes into a crock pot? I'm not complaining!

My big things are casseroles. I love a good casserole, but my family would rather me make several-course meals for supper.

I would like to see some stuff that can be made in bulk and frozen for later....that way I can take advantage of amazing sales when they happen.

"Working Mom on the run" recipes. I do like crockpots, but I also love to cook with my son and so I would like some easy recipes for during the week. (My husband cooks 3-4 nights a week. The man just throws stuff together and it tastes like heaven)

I'm pregnant and diabetic so I'm always looking for lower sugar ways to satisfy my sweet tooth! And I love (read: crave) all kinds of ethnic food so I love to see new ways to try spices I don't use often.
